You don’t just watch the chef. Your hands are in the dough, the coast is behind you, and the table at the end is the thing you just made.

Sorrento, Positano and Amalfi in one day sounds impossible, and it is if you do it alone. The whole thing turns on stopping at the right viewpoints at the right time, before the coaches arrive.

The first time Positano comes into view, the whole bus goes quiet. Pastel houses stacked straight down to the sea, and we pull over so you actually get the photo before we keep going.

You feel the bridge move before you trust it. 137 metres of cable and cedar plank, swaying gently 70 metres above the Capilano River.

Why is the water that impossible turquoise? Glacier silt. Rock ground to powder hangs in the meltwater and scatters the light, and Joffre gives you three lakes of it.
